Scones are good. Good for breakfast, as a snack, with coffee, with tea, as a dessert. This is my favorite recipe. If you don’t have cream, try half and half, if you don’t have half and half, use milk, if you don’t have milk…I don’t know, maybe buy a single use carton because I just don’t think water will work. If you try a milk alternative, like soy or almond or something please let me know how it turns out. You can also leave out the chocolate chips. Try these add ins too: Lemon zest and blueberries, orange zest and dried cranberries, almonds and dried cherries.
2 cups flour
2 Tbl Sugar +some for dusting
1/2 tsp salt
4 tsp baking powder
4 Tbl Butter (colder the better)
3/4 cup cream (colder the better)
1 egg, well beaten
1/2 cup chocolate chips
a little melted butter
Pre-heat oven to 400 deg.Sift all your dry ingredients together and then cut in the butter. (If adding a zest , it should be done now.) Add the cream to the beaten egg and mix (if using cream, don’t over mix), add to dry ingredients. Mix to combine then add the chocolate chips.
knead lightly on a floured surface (please don’t over knead, unless you want bricks). Roll or press into a circle of 1/2 inch thickness.
Using a pizza wheel, cut the dough into wedges, place on a greased baking sheet, brush with melted butter, dust with sugar and bake for 15 min.
